Amazing Dark Chocolate Pie!!! May 6, 2016

So this recipe I made for Easter – and then last week just because its soo good!!  I used the Gertrude Hawk dark chocolate bars and the 70% dark chocolate bars – It is a very very rich pie and a little goes a long way – hope you mothers enjoy it as much as I do!!

 

Ingredients:
1 ready made graham cracker crust or pre baked regular crust
8 ounces cream cheese, softened
1/2 cup powdered sugar – sifted
1 1/2 cups sweetened dark chocolate, chopped (just use a very good quality chocolate for best results)
1/3 cup milk
8 ounce container of Cool Whip
Instructions
  1. Melt chocolate and milk in the microwave for about 45-60 seconds. Remove from microwave and stir until chocolate is completely melted, creating a chocolate ganache.
  2. With a mixer, cream softened cream cheese and powdered sugar together. Add chocolate ganache and mix again till all combined.
  3. Still using the mixer, on low speed, add in Cool Whip. Once combined, pour filling into crust.
  4. Refrigerate pie for at least 4 hours before serving.

Banana Cake with Brown Sugar Frosting May 20, 2015

Banana Cake with Brown Sugar Frosting – this is definitely a keeper – its a happy medium between banana bread and banana cookies!!

TOTAL TIME: Prep: 15 min. Bake: 20 min. + coolingYIELD:36 servings

Ingredients

  • 1/2 cup butter, softened
  • 2 cups sugar
  • 3 eggs
  • 1-1/2 cups mashed ripe bananas (about 3 medium)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • Dash salt

Directions

  • 1. In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs, bananas and vanilla. Combine the flour, baking soda and salt; stir into creamed mixture just until blended.
  • 2. Transfer to a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack.

Nutritional Facts

1 bar equals 202 calories, 8 g fat (5 g saturated fat), 38 mg cholesterol, 100 mg sodium, 32 g carbohydrate, trace fiber, 2 g protein. Diabetic Exchanges: 2 starch, 1-1/2 fat.

BROWN SUGAR FROSTING

    • 4 tablespoons butter, softened
    • 4 tablespoons milk
    • heaping 1/2 c. packed well  brown sugar
    • 2 cup powdered sugar
    • 2 teaspoon vanilla
    • 2 tablespoons milk
  • to prepare BROWN SUGAR FROSTING:.combine brown sugar, milk, and butter and boil 1 minute — let cool –the beat till creamy — adding vanilla and enough powdered sugar & milk till easily spreadable –frost cake when cool

If you search bunny on this site it will bring you up a non traditional bunny cake – which was fun to make- but growing up we always had the same bunny cake and I could not wait to help decorate it – so this year I am going to give you the template for the traditional cake I grew up with – and I hope your kids enjoy making this as much as mine have over the years and as much as I did growing up.

So we all want those amazing Easter eggs – the perfect color and the bright amazing patterns our kids come up with – some  how little kids just know what to dip and when….  found this chart and thought it was an interesting change from your basic boxed egg dye kit.  Hope you enjoy and happy coloring !!!

Oatmeal Chocolate Chip Breakfast Bars January 25, 2015

So one of my children is a big fan of oatmeal in the morning – and a huge fan of chocolate chip CLIF bars – so thought I would try to make her something she could just grab on the morning she is running late (which has been a lot lately) so I went on a mission and found this recipe – hope you all enjoy!! 

Oatmeal Chocolate Chip Breakfast Bars
Makes 16 bars or 32 squares

Ingredients
2 cup oats
1 cup whole wheat flour
1/4 teaspoon salt
1 teaspoon baking powder
1/4 cup peanut butter or applesauce
3 tablespoons brown sugar
1/4 cup oil or applesauce
1 egg
1 1/2 cup milk or almond milk
1 teaspoon vanilla
1/2 cup semisweet chocolate chunks or chips
3/4 cup pecans or walnuts, coarsely chopped

Preheat the oven to 375°F. Grease two 4 1/2 by 8 1/2-inch loaf pans.

Combine the dry ingredients in a small bowl. Beat together the peanut butter, sugar, and oil with an electric mixer until smooth. Beat in the egg. Then, whisk in the milk by hand – carefully, so you don’t splatter. Stir in the vanilla.

Pour the dry ingredients into the wet and fold to combine. Stir in chocolate and 1/2 cup nuts and pour the batter into the two prepared pans. Sprinkle evenly with the remaining nuts(optional)

Bake the bars for 25 to 30 minutes, until golden. Using an offset spatula, loosen the bars from the pan and turn onto a rack to cool completely. When cool, cut each pan into 8 bars. If you want smaller servings, cut each bar in half. Store in the fridge.

Sorry for the large gap in posts - sometimes life just get busy...  but now it is Christmas time and that means baking - and cookies - lots of them!!!

Sugar Cookie

  • Prep Time: 30 mins
  • Total Time: 39 mins
  • Serves: 24-27, Yield: 48-54 cookies

Ingredients

    • 1 cup butter
    • 3 tablespoons milk
    • 1 teaspoon vanilla
    • 1 egg
    • 3 cups flour
    • 1 cup sugar
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon salt

Directions

  1. Preheat oven to 400°F.
  2. In a large bowl, cream the wet ingredients.
  3. Add the dry ingredients and mix until completely combined.
  4. Cover and chill for 1 hour to make dough easier to handle.
  5. Roll out 1/4″ thick and cut with cookie cutters.
  6. Bake for 5-9 minutes or until edges just begin to become golden.
  7. They may appear undercooked but they will turn out perfectly.
  8. DON’T overcook.
 

Thick Fudgy Nutella Brownies September 30, 2014

So yesterday was one of those days… the ones all moms have at some point.  The lose everything including all your cash.. yeah it was one of those days.  And after my daughters soccer game she wanted brownies – so hence go to store to realize I have no money… So I felt horrible – then the husband had to mention we are out of sweets.  So went on a mission – these were the ticket!!!  They are amazing and heaven in a little square – Enjoy!!

NUTELLA BROWNIES

INGREDIENTS:

1 cup (2 sticks) butter
2 1/4 cups sugar
1/2 cup Nutella
4 large eggs
1 1/4 cups cocoa powder
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon espresso powder, optional
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
10 ounce package Hershey’s Milk Chocolate Baking Melts (or chocolate chips)

DIRECTIONS:

Pre-heat the oven to 350 degrees. Butter a 9×13 baking dish.
In small saucepan over low heat, melt butter completely. Stir in sugar and continue cooking for 1-2 minutes, stirring constantly. Do not allow sugar mixture to boil.
Remove from the heat and stir in the Nutella until well combined.
Pour butter mixture into a large bowl or stand mixer, beat in cocoa powder, eggs, salt, baking powder, espresso powder, and vanilla extract. Mix until well combined.
Stir in the flour and baking melts until just combined.
Spread into prepared pan (batter will be very thick and sticky) and bake for about 30-35 minutes, until a tester comes out mostly clean. The edges should be set and the center should still look slightly moist, but not uncooked. Cool on a wire rack.
