So I am sure I suffer from the same thing every mother suffers from… the inevitable what to make for dinner……   Well I thought I would try Sweet & Sour Chicken.  I searched through a ton of recipes – and took some of this one and some of that one.  The end result was amazing!!!  The kids loved it – we liked it.  It will be a new dish in this house – hope you enjoy!!!!

Cut chicken breast into strips or chunks.

Batter –

  • 1 c. four
  • 1 c. cornstarch
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. sugar
  • 1 – 1/3 c. water

Combine all of the above.  Dip chicken and fry in hot grease (375) for 3 to 5 minutes or until internal temp reaches at least 165.   And I did use a thermometer for this cooking process.

Sauce –

  • 3/4 c. sugar
  • 1/3 c. white vinegar
  • 2/3 c. water
  • 1/4 c. soy sauce
  • 1 TBSP. Ketchup
  • 2 TBSP. cornstarch

Combine in a sauce pan – heat till boiling and continue whisking until thickened.

We had this with a seasoned white rice…
