Bar Cookies – how about a different twist – SNICKERDOODLES July 17, 2013

First things first – sorry that I have been on a very lengthy vacation – sometimes life just tends to take over – for this I apologize and will be flooding this blog with new recipes…..

I am recently all about bar cookies – its summer – its hot and I hate turning the oven on period – but when I have to its going into a bar form….

Triple Cinnamon Snickerdoodle Bars

2 2/3 c. flour
2 t. baking powder
1 t. salt
1 1/2 t. cinnamon
1 c. butter
2 c. brown sugar
2 eggs
1 t. pure vanilla extractfinal33
1 10 oz. bag Hershey’s Cinnamon Chips
3 T. sugar
3 t. cinnamon
Preheat oven to 350º.  In mixing bowl, sift together flour, baking powder, and salt (if you’re in a hurry, just fluff it with a whisk).  In your electric mixer bowl, beat together butter and sugar until light and fluffy.Add eggs one at a time, then vanilla, mixing well after each.Slowly add the flour mixture, one cup at a time until all is incorporated.  Turn mixer to low and add cinnamon baking chips.   Spread in a greased or sprayed 9 x 13 pan. Mix together sugar and cinnamon and sprinkle evenly over top of cookies. Bake for 25-30 minutes or until set.
