Oatmeal Cranberry Cookies
Oatmeal Cranberry Cookie Ingredients:
1 cup whole wheat flour
½ cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
1 cup softened butter
1 cup brown sugar
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla
3 cups rolled oats
1 cup dried cranberries
½ cup chopped nuts (walnuts or pecans, totally optional)
Oatmeal Cranberry Cookie Directions
Preheat oven to 350.
Sift together 1 c whole wheat flour, ½ c all-purpose flour, and ½ tsp each of soda, salt, powder and cinnamon.
Cream 1 c. softened butter with 1 c. brown sugar and ½ c granulated sugar. Add 2 large eggs, 1 tsp vanilla, and beat until combined. Add the flour mixture and combine well.
Stir in 3 c. rolled oats and 1 c. dried cranberries and nuts if you choose
Roll heaping tablespoonfuls of dough into balls and place on greased cookie sheet about 2-3 inches apart
