Loaded Baked Potato Soup – Comfort food in the crock pot January 4, 2013

Loaded Baked Potato Soup

6 large potatoes, peeled and cubed (I used Russet)
1/2 large onion, diced
1 quart chicken broth
2 garlic cloves, minced
1/4 cup unsalted butter
8 strips of bacon, cooked crisp, drained and crumbled
Salt to taste
Pepper to taste

1 cup cream or 1 cup 1/2 and 1/2 cream( or canned evaporated milk)
shredded sharp cheddar cheese
Garnish: chives, green onions, sour cream, bacon, cheese. Top it just like a baked potato!


Cook up the bacon and crumble. *Cooking some bacon in the soup really gave it amazing flavor*

Combine first 8 ingredients in a large slow cooker and cook on high for
3-4 hours or low for 6-8 hours (make sure potatoes are tender). Mash potatoes until coarsely chopped and soup is slightly thickened.

Stir in cream and cup of cheese in the last half hour of cooking (just stir and cook on low until all is blended – dairy gets funny and starts to break down when it is cooked too long). Garnish with toppings of your choice.

Served with beer bread – it’s an amazing combination….

I am way behind in my posts lately – so sorry for that – my New Years Resolution is to make sure I post on a regular basis – and not let the everyday hustle and bustle take over…

Oatmeal Cranberry Cookies

Oatmeal Cranberry Cookie Ingredients:

1 cup whole wheat flour
½ cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
1 cup softened butter
1 cup brown sugar
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla
3 cups rolled oats
1 cup dried cranberries
½ cup chopped nuts (walnuts or pecans, totally optional)

Oatmeal Cranberry Cookie Directions

Preheat oven to 350.

Sift together 1 c whole wheat flour, ½ c all-purpose flour, and ½ tsp each of soda, salt, powder and cinnamon.

Cream 1 c. softened butter with 1 c. brown sugar and ½ c granulated sugar. Add 2 large eggs, 1 tsp vanilla, and beat until combined. Add the flour mixture and combine well.

Stir in 3 c. rolled oats and 1 c. dried cranberries and nuts if you choose

Roll heaping tablespoonfuls of dough into balls and place on greased cookie sheet about 2-3 inches apart
