Banana Nut Bread Jam

10 ripe bananas, pureed (need 3 cups)
1 tablespoon lemon juice
4 cups granulated sugar
1/2 cup brown sugar
1 1/2 cups toasted walnuts, minced
1 box pectin
1 teaspoon cinnamon
1/2 teaspoon nutmeg, optional

Mix bananas, walnuts, lemon juice and powdered pectin in large kettle.

Stir while bringing to a full rolling boil. All at once add sugars.

Stirring continuously, heat until full rolling boil. Continue to heat 1 minute.

Fill jars to 1/4 inch of top seat with two-part lid and ring. Boiling water bath for 10 minutes.

Makes about 3 pints.

Homemade Natural Bug Spray Recipe


3 1 ⁄2 ounces (which is basically 1/3 cup) of Witch Hazel

1 ⁄2 teaspoon Lemongrass Oil

1 ⁄ 2 teaspoon Eucalyptus Oil

1 ⁄ 2 teaspoon Citronella Oil

homemade natural bug spray recipe (2)  homemade natural bug spray recipe (3)

Combine all ingredients in a small four-once spray bottle.

When you use it, be sure to shake the bottle contents before spraying


German Chocolate Brownies – whats not to like!!!! May 10, 2012

One of my favorite things is coconut – and german choc cake is on the top of the list of yummy things that have it……   So why not make it into a brownie version that is a lot easier and tastes amazing at the same time..   This is one of those recipes that you want to keep on hand for those summer picnics….and well this may be a little wrong to say – but most children are turned away at coconut – with the exception of mine!!!!  They have yet to turn away from anything I have made…..Enjoy!!!! 

German Chocolate Brownies
1 pkg brownie mix (19 – 20 ounce size)
¼ cup (1/2 stick) butter, cut into smaller pieces
4 oz (half of an 8 oz pkg) cream cheese
½ cup packed brown sugar
1 cup flaked coconut
1 cup pecans, coarsely chopped

Oven to 350. Prepare brownie mix as directed on package for cake like brownies. Pour batter into greased 9×13 inch pan.

Place butter, and cream cheese in small saucepan and cook on medium heat until cream cheese is completely melted. Don’t worry if it looks a bit curdled, it will come together when you add in the remaining ingredients. Stir in the brown sugar and take the mixture off the heat. Add the coconut and pecans and mix well. Mixture will be thick. Drop spoonfuls of the mixture all over the top brownie batter.

Bake 30 minutes or until toothpick inserted in center comes clean. Cool before devouring.


For those of you that hate buying playdough….

One thing I learned while working at a daycare is that kids love playdough!!!!!   And when you have a bunch of kids it is more cost-effective to make it yourself…..and if it happens to smell amazing – well that is an added bonus too ….So Hope that you enjoy this – my kids did all the time when they were younger….





What you’ll need:

1 cup flour
1/4 cup salt
2 Tbsp cream of tartar
1 envelope unsweetened Koolaid
1 cup water
1 Tbsp. vegetable oil

To make:

1. Mix flour, salt, cream of tartar, Koolaid and water in medium saucepan. Stir in oil.

2. Mix over medium heat for 3-5 minutes until mixture forms a ball in the center of pan. Dough will start darkening in color.

3. Remove from pan {caution: will be HOT}. Knead until soft.

4. Store in airtight container or ziploc bag.


It’s Friday and that means Fish Fry May 4, 2012

Friday in the local areas means one thing – Fish Fry – macaroni and cheese – french fries…coleslaw….. these are the main things I think of when I think fried fish – the other is an automatic BEER BATTER…..  And it is hard to find a good fried fish – and I mean a light golden batter that it not to thick – to thin or tasteless….well after years of  mass producing fish batter – I have it perfect….and I am sorry this is one of those that you have to play with – I do not measure anything – I know what it needs to look like …..I swear I could make it in my sleep…..


You can go out and buy the beer batter mixes – and all the fancy this and that – but when it comes to great batter – it’s really only a few things you need to have – 

Beer Batter

  • flour
  • salt
  • pepper
  • paprika
  • beer
the darker your beer the better your batter – although any beer will do – its best to let it set over night – you want it to be thick like a pancake batter
and for a dry batter I use flour – with some salt pepper and paprika….good luck all


Peanut Butter Frosting….its a happy thing May 1, 2012

Peanut Butter frosting is a happy place….its doesn’t matter what it is on….choc cake…brownies….a spoon!!!  But I have tried many flop recipes for it though….this is one that I have found that is a great quick frosting….it has great flavor….and is a great texture….Enjoy!!!!

Peanut Butter Frosting

ready in 10 minutes

Ingredients :

1/2 cup butter, softened

1 cup creamy peanut butter

3 Tablespoons milk

2 cups confectioners sugar


Place butter and peanut butter in a medium bowl – beat with electric mixer.

Gradually mix in the sugar – when it starts to get thick, slowly incorporate the milk one tablespoon at a time until all sugar is added and you have a thick, spreadable consistency – beat 3 minutes to get a good fluffy frosting…..
