With this day every year its a tradition for a lot of households to have Corned Beef and Cabbage…..and this house is no different….Even when I was little my gram always made it and as far as I know is still planning to this year….I started doing my own a few years ago…and this year I am trying it a different way.  I normally do the slow cook method and its amazing – but this year I am going to try the pressure cooker way….so I will let you all know how it turns out….Luck o’ the Irish !!!!


3 lb. cabbage
3 lb. potatoes
1 lb. baby carrots
3 cloves garlic, peeled
1 lb. white onions, peeled
1 cup water
1 whole clove (spice)
water (amount dictated by size of pressure cooker)
1 bay leaf (optional)
This is prepared in a pressure cooker for best results. Place water in cooker with rack. Cut garlic into slivers and insert into beef. Place meat on rack. Add the minimum amount of water called for in the instruction manual for your pressure cooker (varies by size).Close cover and cook and 10 lbs pressure for 1 hour. Let pressure drop of own accord. Remove top, add cabbage, chunks of potatoes and remaining ingredients.Simmer just until vegetables are tender. The benefit of this recipe is that the corned beef, cabbage and potatoes all have a long shelf life, up to 1 month.
